We are delighted to introduce the SyOxidator Sidra from the esteemed Finca Soledad, crafted by our admired amigo and award-winning producer, Pepe Jijón. This exceptional coffee embodies Pepe's philosophical approach to coffee cultivation—a profound respect for nature and a commitment to revealing the purest expressions of terroir and variety.

The distinctive SyOxidator Washed process begins with freshly picked and meticulously sorted coffee cherries. These cherries undergo open-air aerobic fermentation, encouraging an oxidized transformation that unlocks layers of complex flavours. Following this, they are pulped and sealed in fermentation tanks for 48 hours, allowing further fermentation in their mucilage. Finally, the coffee is washed and dried with precision over 20 days, alternating between indirect and direct sunlight to achieve ideal moisture content and preserve the depth of flavours.

From the moment you open the bag, a gentle cherry aroma promises soft, velvety sweetness. As you sip, ripe papaya and sweet melon notes emerge, carrying through to a soothing, clean finish.
