Sebastian Ramirez’s Co-Fermented Pink Bourbon
Harvested at absolute peak ripeness, Sebastian’s cherries undergo an inventive co-fermentation with red fruits. Thanks to his exacting techniques, natural sugars evolve into a vivid tapestry of strawberry, raspberry, red currant and cherry, all underpinned by a subtle hint of dark chocolate. The result is a bright, confectionery-like intensity that makes every sip feel like a small celebration. -
Linarco Rodriguez’s Washed Pink Bourbon
Grown on the Los Cedros plot and meticulously hand-picked, Linarco’s Pink Bourbon is washed and then dried slowly to preserve its irresistible, panela-like sweetness. Each step in Linarco’s process is designed to showcase the variety’s inherent creamy character, without ever masking its delicate nuances.

A soft wave of rosewater and ripe strawberry draws you in, layered with a whisper of vanilla-bean custard.
Flavour

Pour 60g of water at 65°C over the coffee grounds. Allow the coffee to bloom for 1:30 seconds. Make sure all coffee grounds are wet by shaking the brewer.
1:30 - Second Pour
Pour 78g to 225g of water steadily over 15 seconds.
2:00 - Third Pour
Pour 77g to 370g of water steadily over 15 seconds.
2:30 - Fourth Pour
Pour 77g to 370g of water steadily over 15 seconds.
