This Caturra decaf from Los Nogales is a rare mucilage EA lot, processed with a natural solvent derived from fermented coffee mucilage rather than standard sugarcane ethyl acetate. Fully ripe cherries are fermented for 24 hours, washed, sun-dried, hulled, then decaffeinated through repeated warm-water immersion and a 24-hour contact with the coffee-derived must. 0:00 - Bloom
Pour 50g of water at 85°C over the coffee grounds. Allow the coffee to bloom for 1:15 seconds. Make sure all coffee grounds are wet by shaking the brewer.
1:15 - Second Pour
Pour 130g of water at 90°C steadily to 180g over 25 seconds.
2:00 - Third Pour
Pour 125g of water steadily to 305g over 30 seconds.
3:00 - Serve
Remove the Orea and enjoy your perfectly brewed decaf.
