This Gesha comes from the TAKARA plot at Hacienda Copey, Tarrazú, Costa Rica, grown at 2,000 metres between the ITADAKI and DON KS plots. Only fully ripe cherries were picked, mechanically washed to remove mucilage, then slow-dried on raised African beds to preserve clarity and structure.
Served hot, it opens with white stone fruit, floral lift, and sweet mandarin and peach brightness; as it cools, the profile shifts towards red stone fruits and unripe banana, with a brighter, more expressive acidity.
