This Sidra from Finca Soledad is our first lot from Pepe Jijon, chosen for its unusual balance of softness, sweetness, and clarity. It is fruit-led, but more restrained and transparent than the process name first suggests.
In Pepe’s SyOxidator method, the cherries first ferment in open air, then are pulped and held in mucilage before washing and a slow, carefully managed dry. The process adds texture and complexity while keeping the cup clean and well defined.
Expect papaya, melon, cane sugar, and cherry. The texture is soft and rounded, with gentle sweetness through the cup and a silky finish that stays light, delicate, and composed.

Pour 100g of water at 80°C over the coffee grounds. Allow the coffee to bloom for 1:30 seconds. Make sure all coffee grounds are wet by shaking the brewer.
1:30 - Second Pour
Pour 88ml of water at 95°C steadily over 15 seconds.
2:00 - Third Pour
Pour 88ml of water steadily over 15 seconds.
2:30 - Fourth Pour
Pour 88ml of water steadily over 15 seconds.
3:15 - Serve

We recommend using a finer grind size—8.8 (EK43s) or 18-20 clicks (Commandante)—with the Orea Wide or Hario v2, following the Tetsu 4:6 Brewing Method.
