0:00 - Low Temperature Bloom
Pour 72g of water at 85°C over the coffee grounds. Allow the coffee to bloom for 1:30 seconds. Make sure all coffee grounds are wet by shaking the brewer. Pour very slowly.
1:30 - Second Pour
Pour 45ml of water at 91°C steadily over 20 seconds to 117g.
2:00 - Third Pour
Pour 54ml of water steadily over 20 seconds to 171g.
2:30 - Fourth Pour
Pour 83ml of water steadily over 25 seconds to 255g. Heavy agitation to begin with, then slow stream for the last 45g.
