Apulia, in southern Italy, is bordered by the Adriatic Sea to the east, the Ionian Sea to the southeast, and the Strait of Otranto and Gulf of Taranto to the south. Renowned for its favourable climate and mineral-rich soil, this
region is ideal for cultivating almonds.

Arcadia’s orchards lie along the route from Foggia to Manfredonia, near the rugged hills of Gargano. Here, sea breezes and rocky terrain create perfect conditions for almond trees to flourish. Since 2018, Arcadia has produced 100 per cent Italian organic almonds.

Founders Gianni and Maria Pia are visionary young farmers committed to biodiversity, health and rural culture. They explain:

Harvested between August and September at dawn, Arcadia’s almonds are a testament to months of attentive care. By limiting production to small batches, the company ensures exceptional quality while supporting its workforce with fair, sustainable practices.

Today, Arcadia grows traditional Apulian almond varieties - Filippo Cea, Genco, and Fra Giulio - using strictly organic methods. At Glass, we use these almonds for our fully traceable almond milk, the only alternative milk we serve, made exclusively from the creamy Filippo Cea variety.

Filippo Cea is prized for its generous, rounded shape and elegant, buttery flavour with a balanced finish. Crisp on the palate and favoured in patisserie, it’s naturally rich in fibre, protein, and key nutrients including vitamin E, selenium, zinc, calcium, magnesium, and B vitamins such as folate and biotin. Genco almonds are slightly larger, full-bodied, and fragrantly crunchy, with an intense flavour and a characteristic bittersweet finish - ideal for sweets, nougat, liqueurs, and savoury cooking.
