Embark on a sensory journey with Peach & Bergamot symphony, an exceptional Yellow Typica from La Macarena Farm in Colombia's picturesque Cauca region. Cultivated by the esteemed Wilton Benitez at 1,900 meters above sea level, this coffee represents the pinnacle of innovation.
Wilton, a specialist in fermentation technology, meticulously oversees every aspect of cultivation. The process begins with handpicked cherries, followed by sterilization using UV and ozone treatments to preserve quality. The coffee undergoes a two-stage fermentation:
- First Fermentation: 48 hours with Saccharomyces pastorianus yeast to amplify fruity notes.
- Second Fermentation: 68 hours in parchment, integrating natural grain juices from the initial phase.
The grains are then thoroughly washed to enhance flavour clarity and carefully dried for 48 hours at 38°C to lock in the distinctive flavours.
The result is a coffee that captivates the palate with vibrant notes of peach, orange, yellow plum, and bergamot. This golden harmony offers a delightful exploration of flavours, showcasing Wilton's unwavering commitment to excellence.

Pour 50g of water at 65°C over the coffee grounds. Allow the coffee to bloom for 45 seconds. Make sure all coffee grounds are wet by shaking the brewer. Bloom the water at 95°C if you don't have a temperature control kettle.
1:30 - Second Pour
Pour 102g of water at 93-95°C steadily over 20 seconds.
2:00 - Third Pour
Pour 76g of water steadily over 15 seconds.
2:30 - Fourth Pour
Pour 76g of water steadily over 15 seconds.
3:00 - Fifth Centre Pour
Pour 76g of water slowly over 20 seconds.
3:40 - Serve
