Born on the renowned El Diviso farm in Pitalito, Huila, this Sidra variety, a vibrant hybrid of Red Bourbon and Typica, reflects the fearless ambition of 22-year-old Nestor Lasso, his brother Adrian, and their friend Jhoan Vergara.
A few years ago, these young trailblazers transformed their family’s traditional plot into a cutting-edge playground of coffee innovation. Teaming up with CATA Export, they’ve honed groundbreaking processes that have lit up global barista stages—most famously powering Anthony Douglas to clinch the 2022 World Barista Championship. Their bond with CATA Export fuels relentless experimentation while lifting up local youth, proving specialty coffee can be a game-changer for their community. This coffee owes its brilliance to a natural processing method pushed to new heights. It starts with hand-picked cherries, rigorously selected for peak ripeness, then dances through anaerobic and oxidative fermentations. A BioMaster stage locks in every delicate note, while thermal shock rinses and custom drying tech—think stainless steel machines mapping precise curves—elevate flavour to competition-grade perfection. Pour 70g of water at 65°C over the coffee grounds. Allow the coffee to bloom for 1 minute and 30 seconds. Make sure all coffee grounds are wet by shaking the brewer.
1:30 - Second Pour
Pour 75g of 91°C water steadily over 15 seconds .
2:00 - Third Pour
Pour 75g of water steadily over 15 seconds.
2:30 - Fourth Pour
Centre pour the remaining 75g of water steadily over 20 seconds.
